Gift voucher

Is there any way to manage gift vouchers? I have a couple of reservations that are already paid and invoices, I have entered them on dates that the hotel is closed, it is the easiest, but I do not want them to count in production, can you take a reservation out of production? I want it to count in the production when the client confirms me when he comes. So as in the blocks you can make blocks that do not affect the production etc.. there would have to be a reserve, in my case I would also go well for internal reservations that looks like a normal reservation, but maybe in gray or not and that does not count in production but that discounts the sales quota.
